My biggest challenge in eating vegan is the fact that I LOVE cheese and dairy products. I have made progress in this area this month as I bought 3 packages of vegan shreded cheese. Tonight I melted cheese on a baked potato and it was pretty good. I will keep trying. :-)

Sue, I totally agree with what you wrote on my feed about cauliflower roasted with olive and nutritional yeast being delicious! And I thought I hated Brussels sprouts, but I love them fixed that way.

Kudos my friend - I made a really good grilled not-cheese sandwich tonight! It isn't the same - but just a little of "What the Health" info, and your resolve will improve!
I promise myself to not be super strict - and especially when going to eat out will allow the dairy/cheese component. Think veggie eggs Benedict at Huckleberry Restaurant :)

It seems to me like vegan cheese has come along way in the past 10 years...but it's still hard for me to get used to it. I've been more successful using nutritional yeast to substitute for some of the cheesy taste.

I am glad that we are near the end of our challenge. I feel fairly confident that I will keep eating mainly vegan meals, eating more fruits and veggies, and keep reducing, reusing and recylcing.

I think my last reflection wasn't quite finished when it published. Who knows why. I did want to mention that the Backbone Campaign's called "Solutionary Rail" has some excellent ideas to promote train travel AND solve some of the electic grid problems.
  • REFLECTION QUESTION
Transportation Research and Advocate for High-Speed Rail
What are the factors that influence your choice of transportation? These can include things like money, time, and convenience, as well as perceptions of danger or safety. What would need to change for you to regularly choose more climate-friendly options?

My husband and I are very concerned about the Climate Crisis and now we both drive all electric cars. This is a great choice for us because most of our electricity comes from hydro-electric power. When vacationing, we now travel by train. We have found that getting a roomette on a training is the new "first class" way to travel; with meals and wine included in the ticket price. We are both retired so time issues are not as much of a factor and the scenery is beautiful. The articles I read in reguards to having high speed rail in the U.S. was pretty discouraging due to cost, property rights and
The areticles I read were not that encouraging

You got cut off on a great subject! Thank you doing rail - it's another huge potential for reducing C02 and more. Solutionary Rail is revolutionary, hard at work and timely!

Food, Agriculture, and Land Use Learn the Truth About Expiration Dates
How does knowing the difference between use by, sell by, and best by dates empower you to make better decisions?

    Sue Kane's avatar
    Sue Kane 10/25/2023 8:36 PM
It's helpful to know the differences because it really makes an impact if you're considering getting rid of an unused product (food waste). "Use by" is really the only one that should cause a concern; and then only if it looks or tastes "off".

I was quite discouraged when if read that about 1/3 of our food produced is WASTED! I am not convinced that a large enough percent of the population is going to change their wasteful habits. But I was encouraged by some of the things happening in the world right now. Top Chefs are starting "zero waste" restaurants and setting themselves up as role models. Some countries, France seems to be the leader, have passed legislation that stores that thow out good food will be fined and these stores are now donating more to food shelters. That's a win-win!

This is an interesting website. https://www.terracycle.com/en-US/ It's a company that tries to help you recycle many things that our Waste Management program won't take, even condiment packages!
