  • REFLECTION QUESTION
    Food, Agriculture, and Land Use
Why do people in richer countries eat more meat than people in other places? How does eating more meat affect our bodies, our planet, and other people?

    Jonathan Kopp 10/23/2023 9:08 AM
I think a diet with a lot of meat in it is likely more expensive and that's why it's more common in richer countries. Eating lots of meat is not good for the environment.
  • REFLECTION QUESTION
    Food, Agriculture, and Land Use
While dishing food out, we tend to load our plates with more than we need. Using smaller plates helps to mitigate this. Aside from the environmental benefits, what other benefits might come from eating/serving smaller portions?

Eating smaller portions means more leftovers for lunch the next day!
  • REFLECTION QUESTION
    Food, Agriculture, and Land Use
In North America, up to 65% of food waste happens at the consumer level. Chef Steven Satterfield advocates for utilizing every part of a vegetable. How can you incorporate using an entire vegetable, including the skins, tops, and stalks during your next meal prep?

    Jonathan Kopp 10/23/2023 9:01 AM
I started freezing my veggie/chicken carcass scraps to make chicken stock. Made it last night and the house smelled amazing and I'm hoping to makes some incredible soup later this evening.
  • REFLECTION QUESTION
    Transportation
How has your access to various kinds of transportation throughout your life influenced your current attitudes about transportation and your transportation behavior?

    Jonathan Kopp's avatar
    Jonathan Kopp 10/03/2023 1:13 PM
Living and working close to bus stops means I am more likely to use public transportation. It also helps a lot NW Natural provides transit passes for us.
  • REFLECTION QUESTION
    Transportation
What have you noticed on your daily walks? What have you enjoyed? What infrastructure changes could make your walks more enjoyable or possible?

I've been enjoying walking in this fall weather. I wish there were more parks nearby to walk through and possibly more lights on streets that can get pretty dark at night.
