    An average American throws out about 240 lbs of food per year. The average family of four spends $1,500 a year on food that they throw out. Where would you rather use this money?

    I would rather spend the money saved from food waste on a vacation, on home improvement projects, and for investing.

    When I practice mindfulness while eating, I notice the textures and flavors of the food I am eating more. I also notice that I eat slower.

    What was the hardest item to reduce using or cut out that is plastic? Did you find a way to do it?

    The hardest item to reduce plastic was associated with our food system. It felt like every time I tried to eat or purchase a food item there was plastic associated with it. Ways to reduce plastic with food is to use reusable dinnerware in the cafeteria, store leftovers glass or ceramic containers, and buy beverages in aluminum cans instead of plastic bottles.

    As I am reflecting on my reduce food waste journal, I noticed that some of my food waste can be attributed to being over ambitious when grocery shopping. I get all these great ideas in the store, but when I get home some of the ideas fall to the side and food ends up being wasted.

    Today was a double mindfulness day - not only did I practice mindfulness during my meals I also incorporated it into my daily walk.

    Keeping track of my food waste has led me to be more creative in my meal preparations. Instead of letting partial ingredients or food items used in other meals go to waste, I am finding new ways to incorporate them into future meals.

    Practicing eatting mindfully is turning out to be more of a challenge than what I thought it was going to be. I can't believe how much I have been tuned into my devices or TV while eatting. Good thing for this action for this ecochallenge.
