I just tossed some water in a pot, added a few scoops of miso paste, cut up some tofu, and tossed in some seaweed I bought a while ago for this purpose, but never got around to using. I call it a variation, only because I was recipe-less, I made it into ramen (with the addition of some organic millet and brown rice ramen noodles) and I did not add the scallions. -

The nearest market is across town (at least a 20 minute drive on a good day), or out of town; which means, to go there, I would have to use more fuel than shopping at the store close by (where I am also able to buy in bulk to reduce packaging). On balance, I think the travel is not worth it, and I wonder if the map has the most complete/up-to-date information. -

Emily Westervelt 10/02/2023 1:39 PMWe try to only buy sustainable seafood (though this is not always possible when dining out as transparency can be a barrier). We recently switched to giant perch from cod as a staple seafood option after learning that barramundi is a much better option for the environment. The U.S. guidelines are not particularly helpful in navigating for sustainable choices.
