Haiden Whitney 10/30/2023 2:39 PMFirstly, it's important to make sure that the offset is real and verifiable - that you're actually supporting something that will offset your carbon emissions. It's also important to make sure that it is actually making a positive difference, and a permanent one. In other words, not just shifting the harm elsewhere or putting it off for a few years. -

I like using leftovers so much that I plan my meals for the week to include ingredients that will play together nicely later in the week, like making extra rice when I cook lentils so I can make fried rice with that rice and any leftover vegetables (peas, carrots, corn, and so forth). My mother used to make the most delicious hashes, soups, and casseroles from leftovers, and I try to follow her example.

Haiden Whitney 10/25/2023 4:16 PMWhen I spend time outdoors, I find myself noticing the small things about my environment. Whenever I take the time to explore nature, I find something new that I hadn't noticed before. Especially now, in the fall, there is so much evidence of how the environment is constantly changing: from more obvious things, like the leaves, to more subtle things, like decaying stumps or the changing levels of a stream. It's a good reminder to keep paying attention to the environment - not only how it changes naturally, but how it's being changed as well.
