    An average American throws out about 240 lbs of food per year. The average family of four spends $1,500 a year on food that they throw out. Where would you rather use this money?

    I would rather spend the money saved from food waste on a vacation, on home improvement projects, and for investing.

    Mindful eating is healthier for us than eating with distractions. How does your eating experience differ when practicing mindfulness?

    When I practice mindfulness while eating, I notice the textures and flavors of the food I am eating more. I also notice that I eat slower.

    What was the hardest item to reduce using or cut out that is plastic? Did you find a way to do it?

    The hardest item to reduce plastic was associated with our food system. It felt like every time I tried to eat or purchase a food item there was plastic associated with it. Ways to reduce plastic with food is to use reusable dinnerware in the cafeteria, store leftovers glass or ceramic containers, and buy beverages in aluminum cans instead of plastic bottles.

    What was the most interesting thing to learn about sustainable aquaculture practices?

    I am impressed with how fast aquaculture has grown. I first heard about this in the late 90's. It was making waves in creating more sustainable seafood. Now, seafood raised like this can be found in the grocery stores.

    How has your access to various kinds of transportation throughout your life influenced your current attitudes about transportation and your transportation behavior?

    Access to various kinds of transportation definitely influences my attitude and behavior toward transportation modes. This challenge helped me commit to using only public transportation on the days that I commute to work, but it was just the final step in a long journey. The first steps were to limit my access to private transportation. Having my own car made it too easy to drive instead of catching the bus. I shared a vehicle with my daughter and then sold it to her before I was ready to take this last step.

    How difficult or easy was it to change your diet?

    I think for coffee it isn't too hard because you can order that online. I think for chocolate won't be that hard either because I know I've seen the environmentally friendly brands around stores in town. I think for things like trying to eat more of a plant based diet that will be more of a challenge since my husband and my son like to eat a meat based diet.

That is our intent: to restore, and then to retain balance and honor our part in creation." Why is balance important to sustainability?

    In my mind, balance is important so things are sustainable and so that things do not run short or run out or get overused.

    While dishing food out, we tend to load our plates with more than we need. Using smaller plates helps to mitigate this. Aside from the environmental benefits, what other benefits might come from eating/serving smaller portions?

    Using smaller plates hasn't made much of a difference. It is difficult to make just dinner for two. I do use leftovers as lunch the next day. That only goes so far.
